I love a To Do list.

Nothing makes me feel more in control and productive than having one. Not accomplishing the tasks necessarily, but just the fact that such a list exists. And gets re-written. I'm often old school, paper & pen, since the motion of crossing off an item is pure joy indeed, but I also have found the following electronic forms useful:

Any guesses as to what movie the post title is quoting? Hint: It has to do with the color red.

A lot of eating goes on this time of year and rightly so. That's what thick Irish wool sweaters and staying in the apartment watching Netflix under a throw are for. No need for flaunting the bod Oct-May. At least not in the places I've resided in (Minnesota, Ithaca, & New York City). Plus, "nobody likes a skinny Santa".

These slow-cooked, heavy duty foods may get a little complicated to conjure up, but playing with spices, aromatics, and roasting makes you feel part witch/part Ina (more about her later).

A few weeks ago we indulged in a seemingly lunch-like dinner: soup, salad, and bread. But the layering of numerous spices and hearty ingredients made it very seasonal and very fulfilling.

First up: Tyler Florence's fall salad that I originally spied HERE. I added some grape tomatoes & bacon crumbles, and subbed in spinach. Lots of fall flavor. I hope so; it's in the name.

We paired it with one of my favorites - Andaluca Butternut Squash Apple Soup.

This classic fall recipe choice has the addition of leeks.

I knew nothing about leeks prior to this recipe, but found David Lebovitz's blog very informative (as usual). I kind of want to put leeks in everything now.

Seattle based Andaluca also has a divine spicy sangria that we made use of during Hurricane Irene.

We finished by whipping up an easy homemade cinnamon applesauce thanks to a jaunt out to Warick, NY.

Next up...

Bought THIS the other day using a gift certificate I won (I won! I won! I never win things!) reading THIS blog.

Then, I met THIS lady.

The only problem now? No idea how to cook a turkey. Maybe her book I bought for full price (Full price! Full price! I never pay full price!) will give me some guidance.

Apparently, the Missoni for Target line sold out in retail stores in a matter of minutes. The collection was pretty cute. Especially the scarves and baby clothes. As of typing this blog (way past the witching hour, thank you very much insomnia/anxiety/Type A personality), Target.com is still crashed. But do you know what isn't crashed? Ebay, where hundreds of savvy sellers have pillaged their local Targets only to rush home and list the items on Ebay for 20 times the price. Smarties. (Hint, hint: If you are paying that insane price, you might as well look for an actual vintage Missoni piece)

But I have to say, I wouldn't mind a set of these wheels:

Really, it's true.

What is "it", you ask?

Why, this:

Beecher's "World's Best" Mac & Cheese

I could have eaten it with a giant wooden spoon, as pictured above.

To further explain, I've been on a quest to find my mac & cheese. No, that's not code for anything. It just means a mighty macaroni & cheese recipe. The one that I can turn to for a guilty pleasure or a cozy dinner party. It will impress yet comfort. It will taste even better reheated. It will not be low fat.
Along my journey, I've broiled tomatoes, roasted garlic, rendered pancetta, fried onions, baked croutons, tried every permutation of cheese, and I've rouxed and rouxed and rouxed...and they've all been right on, just not the right one.

The Waverly Inn recipe came close with its addition of white truffle oil, but I felt like my soul mate mac was still out there...somewhere...

Then came Beecher's.

Or rather, an introduction to Beecher's via a special someone who had frequented the Pike Place Market home base and whispered in my ear that this may be a like of Lucy.
Before I was able to plan a trip to Seattle, a New York branch appeared in the Flatiron District. What luck!

I ventured to the shop pre-Hurricane Irene, hoping to gather enough curds & whey to weather the storm.

It was hard not to linger and taste...

And not only cheese...

Mmmm...beer...

But, back to mac & cheese!
This really is the mac & cheese for me. Nothing to slave over. The penne gives it a rustic feel and surprisingly, it doesn't veer far from the classic recipe except some chipotle chili powder. But, the trick? Really, really, really, fantastic well crafted cheese, such as Beecher's.

Here's the golden recipe:

Beecher’s World’s Best Mac and Cheese
Serves ten
Ingredients
12 oz. good-quality penne pasta
4 tbsp. butter
1/3 c. flour
3 c. milk
14 oz. Beecher’s Flagship Cheese, grated
2 oz. Monterey Jack, grated
½-1 tsp. salt
1 tsp. chipotle chile powder
½ tsp. garlic powder

1. Preheat oven to 350°. Grease a 9-by-13-inch glass baking dish and set aside.
2. Bring a large pot of water to a boil over high heat. Cook penne for 2 minutes less than recommended on the package. Rinse in cold water; set aside. Pasta should still have a slight crunch.
3. Melt butter in a heavy-bottomed saucepan over medium heat; whisk in flour. Continue whisking and cooking for 2 minutes.
4. Slowly add milk, whisking constantly until sauce has thickened (about 10 minutes). Remove from heat.
5. Add cheeses (reserve 2 ounces to top final dish), salt to taste, half of the chile powder, and all of the garlic powder. Stir until cheese has melted and all ingredients are well incorporated (about 3 minutes).
6. In a medium bowl, mix together cooked pasta and sauce gently but thoroughly. Pour pasta into prepared baking dish; sprinkle with remaining cheese and chile powder.
7. Bake uncovered for 20 minutes. Let stand 5 minutes before serving.

I was a little heavy handed with the chili pepper (to my liking) and added a good microplaning of pecorino romano at the end, but other than those additions, I just stuck to the goods. And boy oh boy was it gooooooood.

My only request is that if you bake up a batch, you invite me over.

My trips to Trader Joe's involve two subway lines and a stroller-packed part of town, so they are sadly few and far between. This means a grand amount of purchasing when I do frequent the TJ's.

Some winners:

I could have eaten the entire jar of this upon introduction in Yankton. So scrumptious scooped up with a tortilla chip.

Katy suggested these goodies. Creamy, refreshing, and surprisingly satisfying for being "mini" sized. I'll be stocking the freezer.

Another staple in my household. I think I could dip just about anything in this dressing and be happy.

Addictive. I warned you.

I hunted for this mix for almost three weeks last fall. Once I found it, I gathered. There is a reason it flies off the shelves.

However much I would love to sip a freshly brewed mug of Blue Bottle coffee every morning, it's just not realistic or affordable. Trader Joe's has a wide array of coffees to try. This chicory blend will remind me of a special trip to New Orleans in the spring of 2005 and the magical Cafe Du Monde.

I would love to try homemade versions of any of the above. Please pass similar recipes this way!

So You Think You Can Dance is already a grand jeté of entertainment, but I have to admit that I often watch the show just for Cat Deeley's quick wit and enviable style. She always seems to be having so much fun with what she does and what she wears. I once read that she does all of her own styling.
